Blueberry Muffins




Today's recipe isn't so much a recipe as it is a hack... I love these blueberry muffins and they couldn't be easier to make. I swear every time I whip up a batch, people think I've slaved for hours. This couldn't be further from the truth. My hack is to use a really good box mix. Yes - a mix! My favorite brand to use is Krusteaz. Just follow the instructions on the back of the box and substitute the canned blueberries for fresh ones. It's that easy! Let me know how you like them. I guarantee they'll be an instant success!

Blueberry Muffins
1 box Krusteaz Wild Blueberry Muffin Mix
1 pint blueberries
1/2 cup water
1/3 cup vegetable oil
3 eggs

Directions: Heat oven to 400°F. Lightly grease muffin pan or line with paper baking cups. Substitute fresh blueberries for the the ones included in the can in the box mix. Stir together water, oil and eggs into muffin mix until blended. Gently stir in blueberries. Scoop batter into muffin pan. Bake for 16-18 minutes.
