Recipe: Chicken Enchiladas Verdes




Having never made Chicken Enchiladas Verdes, I was a little skeptical as to how they would turn out. I had heard from other cooks that they were very labor intensive and being the novice cook that I am, I was worried. My fears were displaced after taking my first bite of these! Thank you to Gaby from What's Gaby Cooking for creating an easy to follow and delicious enchilada recipe. It took me about two hours start to finish and 40 minutes of that was waiting for the tomatillos, onion and poblano pepper to roast for the sauce. Not bad at all! I had never cooked with tomatillos before and I couldn't get over how unusual they were. They look like a green tomato but have these husks on the outside. Naturally I just had to take their picture. I will definitely be making this recipe in the future.
