BBQ Chicken Tacos

I'm always on the hunt for weeknight recipes - which are a lot harder to find than you'd think. Not only does it need to be full of flavor, it has got to be easy to make. I don't feel like cooking a 5-course meal after I get home, you know? I'm happy to report that these BBQ chicken tacos live up to my weeknight requirements! I made things even easier on myself by picking up a rotisserie chicken from Publix to use for the cup of cooked chicken. For the BBQ sauce, I tried Stubb's which is so, so good! It has a peppery bite to it, which I love because I'm not a big fan of super sweet BBQ sauces. I didn't even chop my own onions. I grabbed a container of Publix's pre-chopped pico de gallo in the produce section. (I swear I'm not being sponsored by them, ha!) Another perk about this recipe, it literally takes 10 minutes to cook. Lord knows when I start smelling good food I can't wait to dig in - burned tongue be darned! BBQ Chicken Tacos
4 corn tortillas
8 tablespoons BBQ sauce (I used Stubb's)
1 cup cooked, shredded chicken (I used rotisserie) 
1/2 cup shredded mozzarella cheese
4 tablespoons pico de gallo
4 tablespoons chopped cilantro

1. Preheat oven to 400ºF.
2. Place corn tortillas on a baking sheet and spread 1 tablespoon of BBQ sauce on each one.
3. Top each taco with 1/8 cup mozzarella cheese.
4. Mix remaining BBQ sauce with shredded chicken.  Put 1/4 cup BBQ chicken and 1 tablespoon of pico de gallo on top of each taco.
5. Bake for 8-10 minutes. 
6. Garnish with cilantro.
