Lemon Bars

This recipe is in no way, shape or form healthy! I just want to put that out there because I know I've been promoting wellness content lately. My boyfriend and I threw a housewarming party Cinco de Mayo weekend and I was making a lot of food so I needed an easy but delicious dessert recipe to make. These lemon bars check all those boxes. They take under an hour to make (including baking time) and everyone inhales them! What's not to love about that?!



LEMON BARS

BASE AND TOPPING
(18 1/2 ounce) package yellow cake mix
1⁄3 cup butter, softened
1⁄2 cup pecans, chopped
FILLING
(3 ounce) package lemon pudding mix (cook-type)
(14 ounce) can sweetened condensed milk
lemon, juice and zest of
GLAZE
cup powdered sugar

  1. Preheat oven to 350°.
  2. For Base & Topping: Combine cake mix and butter, and blend thoroughly. Add pecans and mix well.
  3. Reserve 1 cup of the crumb mixture for topping.
  4. Press remaining crumb mixture onto bottom of pan. Roll lightly with glass or pin to smooth out.
  5. For Filling: Combine pudding mix and sweetened condensed milk, mixing until smooth. Add lemon zest and juice to pudding mixture; mix well.
  6. Pour filling over base and spread gently across.
  7. Sprinkle with reserved crumb mixture.
  8. Bake 25-28 minutes or until light golden brown. Cool 10 minutes.
  9. For Glaze: Juice lemon to yield 3-5 teaspoons of juice. Combine powdered sugar and juice; drizzle over warm bars.
  10. Cool an additional 20 minutes.
  11. Cut into bars and serve.
