Veal Meatballs with Zoodles

Hey! It's a me, Mario! Today I'm sharing the recipe for Veal Meatballs with Zoodles.  This is one of my favorite meals to make because I love Italian food and these homemade meatballs are drool worthy. You could serve these meatballs with pasta but if you're trying to eat low carb like me, stick with the zucchini noodles. 

Veal Meatballs with Zoodles
1 pound ground veal (I use Strauss)
1 cup seasoned or unseasoned breadcrumbs
1 quart of your favorite marinara sauce (I use Rao's)
2 cloves garlic, minced
¼ cup onion, minced
¼ cup chopped fresh parsley (or 1 TBSP of dried)
1 egg, beaten
1 teaspoon salt
¼ teaspoon black pepper
¼ grated parmesan cheese

  1. Preheat the oven to 400°F.
  2. Warm marinara sauce in a large pot over low heat - reserving ½ cup.
  3. In a bowl, combine breadcrumbs with ½ cup marinara sauce and egg; add veal, garlic, onion, parsley, salt, pepper and cheese, mixing thoroughly. 
  4. Use a large cookie scoop to form meatballs and place them onto a  bar pan. Bake in the oven for about 22-25 minutes or until cooked through completely. 
  5. To serve, top the zoodles (uncooked so they don't get watery) with the warm marinara sauce and veal meatballs. Enjoy!
