German Chocolate Cookies
1 cup all-purpose flour
1⁄2 cup natural cocoa powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, room temperature
1⁄2 cup granulated sugar
1⁄2 cup packed dark brown sugar
1 large egg
2 teaspoons pure vanilla extract
1.5 cups sweetened, shredded coconut
1 cup semi-sweet chocolate chips
1 cup chopped pecans
  1. Pre-heat oven to 350 degrees. 
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda and salt. 
  3. In an electric mixer on medium speed, beat butter, granulated sugar and brown sugar together until fluffy, about 2 minutes. Beat in the egg and vanilla until smooth.
  4. Reduce the speed to low and beat in the flour mixture. 
  5. With a spatula, fold in the coconut, chocolate and pecans and mix until just combined.
  6. Portion the dough in 2 tablespoon scoops and roll them into balls. Place them on parchment-lined baking sheets, at least 2 inches apart. 
  7. Bake the cookies until dry on top but still soft in the center, about 10 minutes. Remove from the oven and immediately tap the sheets against a work surface to deflate them slightly. 
  8. Let the cookies sit on the sheets for 3 minutes, then transfer them to a rack to cool completely.
