Roasted Thanksgiving Veggies 101

Sweet Potatoes: Preheat the oven to 450ºF. Peel and cube about 5-6 large sweet potatoes. Coat with olive oil, salt and cajun seasoning. Roast 40-50 minutes. 

Brussels Sprouts: Preheat the oven to 450ºF. Trim and halve (or quarter depending on the size) about 2 pounds of sprouts. Coat with olive oil, salt, pepper and 5-6 cloves of garlic. Roast 30-35 minutes. After you take them out of the oven, top with the juice and zest of 1 lemon. 

Butternut Squash: Preheat the oven to 450ºF. Peel, seed and cube about 3 pounds of squash. Coat with olive oil, salt, pepper and brown sugar (optional). Roast 35-40 minutes. 

Carrots: Preheat the oven to 450ºF. Peel and cut about 2 pounds of carrots. Coat with olive oil, salt and pepper. Roast 40-45 minutes.
