Chipotle Chickpea Tacos

CHIPOTLE CHICKPEA TACOS
serves 6

Ingredients
3 tablespoons olive oil
3 cans chickpeas (48 oz.), drained and rinsed
6 tablespoons low sodium soy sauce
1 teaspoon chipotle chili powder
2 teaspoons garlic powder
3 limes, juiced
½ teaspoon salt
tortillas
cotija cheese
pickled red cabbage 
salsa
cilantro
lime wedges

Instructions
  1. Add the olive oil to a pan over medium heat. Once the oil begins to shimmer, add the chickpeas and cook until slightly golden, stirring occasionally.
  2. Add soy sauce, chipotle chili powder, and garlic powder to the chickpeas and saut├ę until golden brown. Top with the juice of 3 limes.
  3. Serve on warm tortillas with desired toppings.
