Chipotle Chickpea Tacos

3 tablespoons olive oil
3 cans chickpeas (48 oz.), drained and rinsed
6 tablespoons low sodium soy sauce
1/2 teaspoon chipotle chili powder
2 teaspoons garlic powder
1/4 teaspoon cumin
1 lime, juiced
½ teaspoon salt
tortillas

  1. Add the olive oil to a pan over medium heat. Once the oil begins to shimmer, add the chickpeas, soy sauce, chipotle chili powder, garlic powder and cumin. Sauté until golden brown. Top with the juice of 3 limes.
  2. Serve on warm tortillas with desired toppings.
